Sudang Lepet, Salted Fish Typical of Buleleng Bali

Sudang Lepet is salted fish which is a typical food of Buleleng, a district in northern Bali. This marinated flat fish is fried enough to get a crunchy and savory texture. Usually, fish that has been fried is simply given coconut oil, lime, and chili to add to the delicious taste. The most delicious Sudang Lepet meal is accompanied by jukut undis (undis vegetable) and plecing kale, as well as hot rice.
Regarding the name Sudang Lepet, it is actually quite unique. The two words are Balinese words which literally means, the word sudang means salted fish, while lepet means bad luck. So when combined, sudang lepet means unlucky salted fish. I don't know why this dish that is cheaply priced can have such a unique name. Perhaps because the manufacturing process requires the fish to undergo various treatments, ranging from drying, roasting, to beating to make it thin, so that when it is fried, it will be like crackers, but taste salty and crispier.
To cook it, Sudang Lepet only needs to be fried and then seasoned with coconut oil, lime juice, and added with sambal matah or chili rice. Sudang Lepet is made from special marine fish, most of which are obtained from fishermen who go to the waters of Madura.
Enjoying Sudang Lepet is best accompanied by Jukut Undis or Vegetable Undis and Plecing Kakung. Undis is a type of black bean-like vegetable, which grows a lot in mountainous areas or highlands. Usually, undis vegetables are made by boiling with various spices into vegetable undis gravy with a sauce that is of course blackish in color but this sauce is what makes the aroma and taste so delicious.
The blackish gravy is similar to rawon, a typical dish from East Java. This recipe can also be made with chicken breast to add a savory flavor to the broth, or completely just use undisclosed beans to make a vegetable soup suitable for vegetarians. In addition to chicken, the original jukut undis uses pork ribs in its manufacture. Having a unique and refreshing taste, jukut undis is so harmonious juxtaposed with the savory sudang lepet and spicy chili sauce.
Even so, the price of processed fish is relatively cheap. One package is priced at an average of IDR 10 thousand.
