Barlian, Fish Fermentation Culinary from Gorontalo

Holiday Ayo - If you visit Gorontalo, don't forget to taste this culinary dish, it's guaranteed to taste good and make you addicted. Its name is Barlian or Biluluhe, the traditional food of the Gorontalo people. This food is very familiar to the people of Gorontalo.

What makes this food interesting is that the combination of ingredients is considered unusual, grated cassava and Javanese fish or mujair and given a chili sauce to make it spicy, savory, and sweet. Barlian or Biluluhe, is made from grated cassava, tossed with fish mixed with chili sauce, and then cooked by steaming.

The fish used were fish that had died last night in the lake. Not that this dead fish is rotten fish but this fish is the most suitable for cooking Barlian compared to fresh fish. Due to the fish that died last night, the fish has naturally fermented and will add a better taste to make Barlian.

The ingredients used are chili, cassava, salt, and dead fish that have been obtained from the lake.

The type of fish in this food is not specified, then clean the fish to be cooked and take only the meat.

Then grate the cassava, then mix the fish with the mashed chili and add coconut oil, stir until evenly distributed. After that, put the grated cassava into a banana leaf then flatten it and add the fish which has been coated with chili and coconut oil then cover again using grated cassava.

Then steamed and Barlian ready to be served. The distinctive aroma given by Barlian is the main attraction. Fish died last night not making this Barlian smell fishy but into delicious food.

In the afternoon is the right time to eat barlian.

Barlian which is still hot can be served on a plate by opening the banana leaf wrapper. The grated cassava wrap that wraps the tilapia fish tastes spicy and savory because it is mixed with spices and chilies. Well, if you visit Gorontalo Barlian, it's okay because it tastes very tempting.
