Napoleon Cake, Beloved Dessert from Russia

This Cake is a traditional French dessert consisting of several layers of crispy, crunchy Puff Puff Pastry filled with a thick layer of pastry cream, with a top layer covered with powdered sugar glaze with a swirl of brown sugar glaze.

This cake gets its name from the French emperor Napoleon but there is no definite explanation, The most popular explanation is that Napoleon ate too many cream puffs on the day before the battle of Waterloo in 1815, and resulted in terrible indigestion on the battlefield.

There is a lot of theory to explain how napoleon got its name, The traditional zigzag pattern of white and chocolate icing made on top of the cake looks like a series of N. Another story, this cake was first made by an Italian chef in Naples who named it "Napoletano" and his name was later changed to "napoleon" in English.

This cake has many variations, such as the Russian Napoleon Cake. Russian Napoleon cakes are different in that they usually have more layers of cake, up to 15 of puff pastry, which is rolled super thin. A thin layer is then topped with a moderate amount of pastry cream.

This allows the puff pastry to be soft and to be very moist and tender, as shown below.
