Kaledo, Typical Food of Palu City, A Combination of Savory, Sour and Spicy Flavors
Holiday Ayo - Don't claim to have ever set foot in Palu City, Central Sulawesi, if you haven't tasted kaledo. This dish is a type of clear yellowish soup with a very distinctive taste, namely sour, savory and spicy.
At first, this dish was only made from beef leg bones with a little meat. However, because there are more and more kale sellers, beef leg bones are getting harder and harder to find.
To replace the leg bones, the cow's spine is also included as an additional main ingredient. There are no official records regarding the origin of this food.
But in the past, Kaledo was a dish of honor by the kings of the Palu Valley. Kaledo is served to guests of honor from the nobility called Toma Oge or Toma Langgai or Langga Nunu. Usually, they are the rulers of the sub-kingdoms in the Palu valley.
The specialty of Kaledo lies in the use of a thick Javanese tamarind seasoning. The tamarind used in this kaledo is tamarind that is still young in order to get the acid concentrate. The mixture of onions, salt, and lime makes the sauce taste fresh and delicious when eaten with beef.
If you feel it's not salty or sour, usually salt and lime pieces are provided on the table, don't forget a bowl of chili for those who like it spicy. There is one more thing that makes this dish different from the sum-sum soup, kaledo is enjoyed with boiled cassava. Cassava is boiled until tender without any seasoning.
For a traveler who does not consume cassava as a staple food, it will feel strange, but after tasting, the plain cassava feels right with the gravy and beef. But if you don't like cassava, don't worry, restaurants usually provide another option, namely rice.
In addition, another feature is the presence of complementary spices typical of the city of Palu. How to eat it also looks interesting and special. The meat that sticks to the bone and marrow in the cavity of the beef bone is actually very delicious to enjoy. Therefore, the traveler should not be surprised if the way of serving Kaledo cuisine looks different from other dishes.
Usually, the way of serving kaledo food is provided with a knife, fork, chopsticks, or pipette which serves to remove the marrow from the cavities of the cow's bones.

The price of this food is quite affordable, ranging from IDR 25 thousand to IDR 50 thousand per serving.
